Cauliflower Peanut Butter Muffins

There's something so comforting about biting into a hot and fresh muffin in the morning! Pair it with a nice cup of coffee or tea, and we're in heaven! Prepare to taste these sweet cauliflower peanut butter muffins made with our newest flavor and be amazed with the fact they're gluten free too! 

Ingredients

Muffins

  • 1 c. Glean Cauliflower Goodness
  • 1 c. rolled oats (or gluten-free oats)
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • ½ c. peanut butter, natural
  • ¼ c. honey
  • ½ c. dairy-free greek yogurt
  • ¼ c. dairy-free coconut milk (or almond milk)
  • 1 tsp. vanilla extract
  • 1 egg
  • Pinch of salt
  • 2 bananas, medium

Muffin Drizzle

  • 3 tbsp. peanut butter
  • 1 tbsp. honey
  • ¼ c. dairy-free coconut milk (or almond milk)

 

Instructions

  1. Preheat oven to 375°F
  2. Mix flour, oats, baking powder, baking soda, cinnamon, and salt in a medium-sized bowl.
  3. In a separate bowl, mash bananas and add peanut butter, honey, Greek yogurt, almond milk, egg, and vanilla extract.
  4. Add banana mix to the first bowl, mix until well combined.
  5. Evenly add mixture to 12 muffin cups in muffin pan (see photo below)






  6. Bake for 15 minutes.
    Muffin Drizzle
  7. Mix peanut butter, honey, and almond milk. Evenly put on muffins
  8. Enjoy!
