There is nothing like starting your morning off with a breakfast you can get excited about! These muffins made with Pumpkin Goodness are absolutely amazing and a perfect grab-and-go morning meal!

Ingredients

  • 1 c. Glean Pumpkin Goodness
  • 1/4 c. rolled oats + 1/4 c. Glean Cauliflower Goodness
  • 1 tbsp. vanilla protein powder
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 c. peanut butter
  • 1/2 c. dairy-free greek yogurt
  • 1/4 c. almond milk
  • 1 tsp. vanilla extract
  • 1 egg
  • Pinch of salt
  • 2 bananas, medium
  • 1/4 c. granola and/or nuts

Instructions

  1. Preheat oven to 375°F
  2. Mix flour, oats, baking powder, baking soda, cinnamon, and salt in a medium-sized bowl
  3. In a separate bowl, mash bananas and add peanut butter, Greek yogurt, almond milk, egg, and vanilla extract
  4. Add banana mix to the first bowl, mix until well combined
  5. Evenly add mixture to 12 muffin cups in muffin pan
  6. Top with granola and/or nuts
  7. Bake for about 15 minutes until toothpick comes out clean
  8. Enjoy!
