Pumpkin Muffins by @cincyfitfoodie
There is nothing like starting your morning off with a breakfast you can get excited about! These muffins made with Pumpkin Goodness are absolutely amazing and a perfect grab-and-go morning meal!
Ingredients
- 1 c. Glean Pumpkin Goodness
- 1/4 c. rolled oats + 1/4 c. Glean Cauliflower Goodness
- 1 tbsp. vanilla protein powder
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 c. peanut butter
- 1/2 c. dairy-free greek yogurt
- 1/4 c. almond milk
- 1 tsp. vanilla extract
- 1 egg
- Pinch of salt
- 2 bananas, medium
- 1/4 c. granola and/or nuts
Instructions
- Preheat oven to 375°F
- Mix flour, oats, baking powder, baking soda, cinnamon, and salt in a medium-sized bowl
- In a separate bowl, mash bananas and add peanut butter, Greek yogurt, almond milk, egg, and vanilla extract
- Add banana mix to the first bowl, mix until well combined
- Evenly add mixture to 12 muffin cups in muffin pan
- Top with granola and/or nuts
- Bake for about 15 minutes until toothpick comes out clean
- Enjoy!
