Sweet Potato Pecan Muffins by @wonderfullybalanced

These Sweet Potato Pecan Muffins taste like fall and we cannot get enough! Loving this gluten-free and genius recipe by @wonderfullybalanced!

Ingredients

  • 1 sporty mashed banana 
  • 1 egg
  • 1/4 cup grape seed oil
  • 1/3 cup pecan milk
  • 1/3 cup local honey
  • 1 tsp vanilla extract
  • 1/2 cup gluten-free flour
  • 1/2 cup Glean sweet potato flour
  • 1 packet of @simplified_superfoods (contains collagen, chia seeds, flax seeds...)
  • 1 tsp cinnamon 
  • 1 tsp baking soda
  • 1/2 tsp baking powder

Instructions

    1. Preheat oven to 350 degrees 
    2. Mix together ingredients
    3. Pour into muffins cups and top with chopped pecans
    4. Bake for 12-15 minutes
    5. Let cool, serve and enjoy!
