Sweet Potato Pecan Muffins by @wonderfullybalanced
These Sweet Potato Pecan Muffins taste like fall and we cannot get enough! Loving this gluten-free and genius recipe by @wonderfullybalanced!
Ingredients
- 1 sporty mashed banana
- 1 egg
- 1/4 cup grape seed oil
- 1/3 cup pecan milk
- 1/3 cup local honey
- 1 tsp vanilla extract
- 1/2 cup gluten-free flour
- 1/2 cup Glean sweet potato flour
- 1 packet of @simplified_superfoods (contains collagen, chia seeds, flax seeds...)
- 1 tsp cinnamon
- 1 tsp baking soda
- 1/2 tsp baking powder
Instructions
- Preheat oven to 350 degrees
- Mix together ingredients
- Pour into muffins cups and top with chopped pecans
- Bake for 12-15 minutes
- Let cool, serve and enjoy!
